Tiramisu Recipe

Hey guys,

So Tiramisu is my favorite desert & for a while now have been trying to perfect my recipe. I was wondering if you had any classic tiramisu recipes I could try out? I use the below, and have been told by people that using Zabaglione in tiramisu is not traditional, it tastes bloody good though! lol


Coffee liquer
2 tsp sugar
Sponge fingers
4 egg yolks
8tbps sugar
5tbsp marsala wine
1 cup heavy cream.
16 ounces Mascarpone
Cocoa powder

1. Dip each side of the sponge fingers into the coffee liquer mixture & place half in the bottom of a dish.
2. Whisk the egg yolks until they are light and fluffy, whisk in sugar and marsala, place the bowl on a ban marie and stir until mixture has thickened and has a smooth texture. This is called Zabaglione.
3. Whip cream into soft peaks.
4. In a separate bowl beat the mascarpone until smooth.
5. Add the cheese to the Zabaglione & beat until combined.
6. Fold the whipped cream into this mixture.
7. spread a thick layer on top of sponge fingers, now add another layer of sponge fingers and another layer of tiramisu mixture.
8. Finish off with a dusting of cocoa powder.

The recipe I follow is the one printed on the side of the packet of Italian Savoiardi fingers, which are the best ones to use, and superior to supermarket own. The recipe is different to yours in that it doesn't use sugar or eggs, but it is delicious and easy to do and always gets great compliments. Looks great made in a glass bowl so that the layers can be seen.

Yours is very similar to mine, OP. Sometimes, however I substitute the mascarpone for ricotta and the savoiardi for biscotti.

My pleasure - here it is.

1 packet of Italian Savoiardi sponge fingers (Tesco)
397g can sweetened condensed milk
500gm mascarpone cheese
3 tablespoons brandy
150ml espresso or strong black coffee
15g cocoa powder
a few squares plain chocolate

In a bowl mix together condensed milk and mascarpone cheese.
In another bowl, mix the brandy and coffee.
Dip each sponge finger one by one into the coffee mixture very quickly so they don't go soft, and put a layer of them on the base of a rectangular dish. A trifle bowl would be fine as well.
Spoon half of the condensed milk/mascarpone cheese mixture over the sponge fingers, spreading to cover. Sift a generous layer of cocoa powder over. Repeat with another layer of the sponge fingers, and the remainder of the creamy mixture. Sift another fine layer of cocoa powder on, and then grate some plain chocolate finely over the surface. Cover with clingfilm and pop into fridge for at least 3 hours to get really chilled. I make mine in the morning and it's perfect for the evening. Serves 6-8.

I made tiramisu once and it tasted ever so eggy, put me off tiramisu for life.

My mum swears by Nigella'sIrish Cream Tiramisu. It doesn't contain any coffee though...
