Homemade chocolates
As we were taking a thread off topic over in advice, I thought I should start a thread over here instead!
I'm making chocolates for my mum for Mothers Day. I'm sort of using this recipe, but instead of truffle outsides, just using dark chocolate. And I couldn't find dulce de leche so I substituted it with Bonne Maman caramel spread! I'm also making some dark chocs with hazelnuts in. And depending on how they all come out, I may make some truffles later. Has anyone else got chocolate making experiences or recipes to share?

I have never used that stuff before or added hazels, do you roll the hazels in the stuff or by some magic

I've tried it a couple of times, I've never managed to make any that were gift-presentable though - they were incredibly tasty, but a bit messy looking! I've tried Delia's version (http://www.deliaonline.com/recipes/t...-truffles.html) and another similar one that I can't find the link for (seem to remember it had no yoghurt and different volumes of choc and cream). Delia's came out the best out of the two, the other ones were a bit too runny to handle properly and melted as soon as they came out the fridge. It was good fun to try and I'll have a go again some time as they were sooo yummy - lucky mum to have some made for her

Mummypigget - I put some melted choc into the bottom of the molds and then let it set. The added a hazelnut in the middle of each one, and topped with more melted choc.
Specktater - I made truffles at Christmas but can't remember what recipe I used! I seem to recall that the 'grammage' of chocolate was similar to the 'milileterage' of cream, but some recipes I've been looking at seem to use more cream. I left the mix in the fridge too long last time and it was set solid so just ended up spooning chunks out of it, squishing as much as i could and then coating them in chocolate! ![]() Just to add, I've tried one of the melty middle chocs and they're very yummy! Although in my excitement at making chocolates, I did forget to add the vanilla extract.

I nade truffles a couple of months ago. I used a mix o Glaxay choclate for taste and cheap chocolate to bulk it out. Mixed with the hot cream. I added a bit too much cream (maybe 10ml?) so they were difficult to handle, but we took them to a friend's and ate them as pudding and they were magnificent.
I'd like to make them again but add some falvours, maybe candied peel or freeze dried fruit (raid the Special K box LOL) |

I re-used a chocolate box and stuck the chocs in little paper cases. Unfortunately the choc box is a seven deadly sins one(!) so I will have to explain to mum that it's recycled (and that I'd like it back please!). |

I just hope she likes them! I did want to make coffee creams for her (her faves) but making fondant looks like a real faff!

I meant to add, where did you get your moulds from, stupidly, I've never thought to get one and used spoons to make roundish ones
I would like a mould I think!!

A question for everyone... is it possible to use Baileys instead of cream in truffle recipes? I'd like to try it but don't want to end up wasting either Baileys or chocolate!

Thanks for the link jojo, we have one quite local, so next time I'm out I will get one, also for Lakeland they're not too expensive!!
The spoons and me always end up getting messy! I am not sure about bailey's but if it didn't turn out quite right you could bung it in freezer and you have you own posh ice cream

![]() Those look amazing (we need a lip smacking smiley) - a far cry from the poo-like blobs I produced!!! I take it the lighter caramely looking ones are coffee based? How did you do the swirls? I take it you fill the moulds with a thin layer first then fill the cooled case with a truffle mix? I think you need to write a how to!

Apparently the rougher the alcohol in a truffle the better! That's why I was wondering whether to use Baileys instead of cream. Just a thought, maybe I could use half and half...
The ones with the swirls on aren't truffles, I just melted some choc, put some into the bottom of the moulds, let it set, then added toffee/hazelnuts and then more melted choc on top. The round ones in the second pic are the truffles with the toffee in. Some of them are a bit massive! Better shape this time though as I didn't let the ganache set too hard - the truffles I made at Christmas were more like the poo-like blobs you describe as the mixture has set solid! |
