Prune Compote
I've got some Alesto prunes and am thinking of making a prune compote, does anyone know good recipe?

I think I'd just soak them for a couple of hours in a little apple juice, then heat them through with the remaining juice and maybe a drizzle of honey to taste until they start to mulch down. Cool them, mash them up and Bob's your uncle.

I've been thinking about this a bit more, and would probably put a cinnamon stick in with the prunes whilst I stewed them, and maybe use vanilla sugar instead of honey. I'd then serve it with Greek yoghurt drizzled with honey.
I saw another recipe where they recommended equal weights of prunes and dried apricots. Just cover with water in an oven-proof pot with a tight-fitting lid. Pop it in a low oven overnight - this might be a good one if you've got a range. |
