Courgette Cappuccino
Right.
I was out for tea last night at a right posh place, and we got an amuse bouche of courgette cappuccino - which was absolutely beautiful!! However, I now can't find a recipe to try and recreate it myself! I know it definitely had garlic in it (definitely no mistaking that lol) and obviously courgettes (and i'm not really fussed about the wee bit of white foam on the top - that was (as my friend so nicely put it) just patter!!) but the only recipes i can find online just look kinda wrong. Any help greatly appreciated

what was the posh place called?
I know Heston has released a fat duck cookbook, so the place you went to may have something similar |

I googled it and a recipe came up in Dutch but I clicked on the translate page and this appeared (in case it comes up in Dutch when you click the link!) ETA: Ha ha, this is a Belgian recipe http://translate.google.co.uk/transl...cino%26hl%3Den - I like the bit when it says Go to China!

I'm definitely trying this one, have been looking for a terrain dish that I liked the look of for ages and this ticks all the boxes Terrine de courgettes fresh goat cheese and smoked salmon This summer dish will marvel in your cold buffets and delicious you will input that you can prepare in advance. I've left the French original as it's interesting ( really it's too fiddly to delete )ingredients : Serves 4 to 6 people: [LIST][*]5 slices of smoked salmon[*] 5 small zucchini[*] 20 cl of cream thick[*] 250g fresh goat cheese[*] 10 cl of cream liquid[*] 10 g gelatin[*] 4 sprigs of dill[*] 4 sprigs parsley[*] 4 sprigs of chives[*] 2 tablespoons of olive oil[*] pepper[/LIST] Preparation Preparation of ingredients * Hacher finement l'aneth et la ciboulette Finely chop the dill and chives * Effeuiller le persil et le hacher finement Pluck the parsley and chop finely * Laver les courgettes et les émincer en fines tranches de 2 mm avec une mandoline Wash zucchini and slice into thin slices 2 mm with a mandolin * Faire bouillir de l'eau salée dans une grande casserole Boil salted water in large saucepan * Plonger les rondelles de courgettes pendant 3 minutes dans l'eau bouillante Dip the zucchini slices for 3 minutes in boiling water * Egoutter les courgettes et les passer sous de l'eau froide pour stopper la cuisson Drain the zucchini and pass under cold water to stop cooking * Bien laisser les courgettes égoutter sur du papier absorbant. Well let the zucchini drain on paper towels. Préparation de l'appareil de la terrine Preparation of the apparatus of tureen * Laisser tremper les feuilles de gélatine dans de l'eau froide pendant 5 minutes Soak the gelatin in cold water for 5 minutes * Placer le fromage de chèvre frais, la crème épaisse dans le bol d'un mixeur Place the fresh goat cheese, heavy cream in the bowl of a mixer * Mixer jusqu'à obtenir un mélange lisse et homogène. Mix until a smooth homogeneous mixture. * Ajouter l'huile d'olive et la gélatine Add olive oil and gelatin * Bien mélanger Mix well * Battre la crème liquide en neige Whip the cream until stiff * Incorporer délicatement la crème fouettée au mélange au fromage de chèvre Gently fold the whipped cream mixture Goat Cheese * Ajouter la ciboulette, l'aneth et le persil haché Add chives, dill and parsley * Poivrer Pepper * Bien mélanger Mix well Préparation de la terrine Preparation of the dish * Chemiser l'intérieur d'une terrine ou d'un moule avec du film alimentaire Blouse inside a bowl or mold with plastic wrap * Tapisser le fond du moule et les bords de la terrine avec des rondelles de courgettes Line the bottom of the mold and the edges of the dish with sliced zucchini * Disposer une tranche de saumon fumé dans le fond du moule Place a slice of smoked salmon in bottom of pan * Recouvrir d'une couche de lamelles de courgette Cover with a layer of sliced zucchini * Recouvrir avec la crème au fromage de chèvre frais Cover with cream fresh goat cheese * Répéter l'opération jusqu'à épuisement des ingrédients en prenant soin de terminer avec une couche de lamelles de courgettes Repeat until all ingredients being careful to finish with a layer of sliced zucchini * Placer au réfrigérateur pendant 12 h Place in refrigerator for 12 h Présentation Overview Servir en tranches accompagnées d'une petite crème délayée dans du jus de citron avec des fines herbes. Serve in slices accompanied by a little cream mixed with lemon juice with herbs. Suggestions Suggestions Je vous laisse le soin d'essayer également cette recette avec des filets de truite fumée ou du flétan fumé, c'est délicieux et c'est aussi rempli d'Omega 3.
