I'm going to make jerk chicken in pitta tomorrow, and was wondering, as I have never tried jerk chcken before, what sauce would go with this? Also what type of salad?

Thanks in advance!

I'd recommend the Levi Roots cookbook, 100%

One recipe calls for you to stuff a chicken with sliced lemon and onion, and season the skin. I used a cheap economy chicken and my partner said it was the best he'd ever had! The liquid in the lemon and onion is forced to rise up through the breasts of the chicken, so they're ridiculously juicy. I make it every couple of weeks

You can get some of Levi Root's recipes on the BBC Food website from his Carribean series.

I think this is correct, if you are doing it properly the meat should be pretty fiery. Maybe a kind of mild salsa.

Hey guys, I got tomato & red pepper relish in the end. It was all they had in Tesco!

I will let you know how it tastes.

if you're going to use levi's recipe, try his chicken kickbabs. Marinated chicken, spicy tomato sauce, cheese, salad in loco bread, a bit of prep, but I've made them twice now and they are delicious and if you don't want to make the loco bread they would work well with pitta breads. Only thing I would say if marinating the chicken leave it overnight.

I saw a snippet of roots show the other week and he did jerk chicken with oranges but somewhere he also did a mango salsa which looked nice.
