Dry spicy Indian mushrooms
Many moons ago in Pune we stayed at a small hotel that served a mushroom snack. Whole mushrooms coated in a dry cooked spice served on sticks with a chilli sauce for dipping.
Every time I try to recreate this delish treat, the mushrooms sweat and turn the spice into sauce. My latest thought is to precook the mushrooms in water/stock and then dry them before coating in dry spice and frying, but as this is just the latest in a long line of experiments I don't hold out much hope! Has anyone come across these before and have a name or recipe, failing that does anyone have any suggestions about how to go about making them? |

Sorry,can't help with the recipe name.
However,pre-cooking them in water or stock,will always result in a sauce,rather than the crispy delight,you're trying to recreate. Are you frying the mushrooms,without adding any other ingredient? Are you dry-roasting the spices,then grinding them and then coating the mushrooms immediately,after frying,whilst they are hot? |

I've tried just plain frying them with ground spices and the mushrooms tend to sweat and make a sauce, no matter the temp - that's why I thought giving them a chance to get all sweating done on the precook might be a good plan.
They weren't exactly crispy just coated in spices (a bit like bombay potatoes). I'll give frying them first, coating in spices then re-frying a go though - sounds like it might work - Cheers for the input

I tried the boiling then dipping in spice mix and flash frying on high temp. It worked well and we definitely achieved the correct coating effect, but the mushrooms themselves were very juicy and lacked flavour so I'm going to try TV Dinya's suggestion of frying first instead of boiling. |

Maybe deep fry them very fast in really hot fat.
