Chinese Food Cooking

When cooking chinese food I've heard people use the phrase 'before it catches' - especially when using ginger at the start of a recipe.

Is this as simple as stopping it from 'catching fire', or am I missing something just as obvious ?

I'm sure the term is used to mean before it burns and or sticks.
