Making burgers

Can you make beefburgers without onion?
I've got a real craving for beefburgers today, but have no rolls, and no onion. All the recipes I've looked at say you need onion, but has anyone ever made it without? Or any ideas for any good substitutes? I have some fortnight old spring onions (I know, I'm a tramp - I havnt cleared the fridge out for a while!), but dont know how that would go...

Also - How about any roll substitutes? I have bagels and bread lol!

Yes, a recipe is a general picture not one of the ten commandments, so if you have no onions don't put onion in.

I never use onion in anything and I have made plenty of burgers

I don't always put onions in my burgers, just season the mince and shape into burgers. You get the pure taste of the meat that way. The most important thing for me is getting a good char on the outside and just flipping them once. No prodding, pressing or moving them around, just leave them until they are ready to turn over.

Ok thanks! How long would you suggest cooking it for? I reckon about 80-100 grams per burger, is it best to cook in a frying pan or in the oven? I'm not great at judging when they are cooked!

A hot pan and oil the burgers not the pan. 3 minutes on each side I do them for but it depends how well you like them done, I like them medium.

I think Id like them medium but is it safe? Id love to say it's organic freshly minced beef, etc but it's m&s minced beef that's been in the freezer for about six weeks!

In which case I'd say extend the cooking time to make sure it is cooked through. A tip is to put a wee bit of butter in the centre of the burger to keep it moist and juicy rather than dry. But I'm someone who likes his burgers charred like an ice hockey puck.

Although I don't like using sliced bread for burgers (I find it too thin and falls apart), there's no reason not to as a last resort. bagels would also work well.

I never use onions and I always use this recipe:

The link says lamb burgers though the recipe uses beef mince. They always turn out tasty and moist because of the grated cheese you put in.

Well I attempted it... I used about 175g of minced beef to make two burgers - I put it about a teaspoon of coriander (I saw it on a recipe for beefburgers), and a teaspoon of paprika. Salt, pepper, chopped garlic. I put some chopped spring onions in, and some mustard. I grated a load of parmesan cheese in, mixed it all together with an egg yolk, and shaped them (I put a bit of butter in the middle as suggested) - Now they are just in the fridge waiting to be cooked - Thought I'd let them firm up a bit!
I've done some wedges as well, which are cooking as we speak/type, and think I will cut some white bread into circle shapes and grill to make it moderately crispy...
I'm kinda looking forward to it now, hope it tastes nice!

Yum! It was well nice! I cooked them for ten minutes, turned once and left alone... It was kinda juicy, but crusty onthe outside. Thanks all!

Heh it was really nice, and dead easy - whenever I've made them before, they've always tasted quite bland, but Id definately make them again!

I make some really tasty and healthy Thai turkey burgers which are an absolute doddle to make.

400g turkey mince
4 spring onions finely chopped
Generously grated root ginger
Finely chopped red chilli (using as much as you like or can handle)
A generous bunch of coriander chopped
Salt and pepper
Cup of flour
Egg yolk to bind

Brown them both sides in a pan, then flash them under the oven. They don't take long to cook at all. They go really nice with rice, stir fried veg and chilli, garlic and lemon grass sauce as a dinner, and would probably go down a treat at a BBQ, shoved in a bun with a nice cold Singha beer
