Blue Cheese sauce for Steak

I fancy something different with my steak tonight. I saw a couple of recipies on River Cottage for Broccoli with Blue Cheese and they looked nice and thought I would try the same adding a steak and some potatoes.

I found this recipe that seems nice

Any other suggestions for a nice sauce? and also a recommended cheese? I was thinking of a mildish blue cheese.

just a put on little knob of butter while you are resting the meat

I like to deglaze the pan with some cognac/brandy/madeira then add some creme fraiche/cream and finish with a good twist of black pepper.

I have steak usually twice a week. I do them in a variety of ways and tonight I fancy a blue cheese sauce.

I tend to prefer my steaks plain and simple. Having said that, Pioneer Woman's blue cheese steak sauce is AMAZING. I just have it on mashed potatoes instead of steak. Seriously, it is AMAZING.

Steak with blue cheese sauce is my absolute favourite! There is a restaurant near me which does the most amazing one. Everytime I go there I try and resist it, and end up looking at the menu for ages trying to decide on something else, but in the end I always give in to it and order it. Yum yum, made my mouth water now.

Never had blue cheese with steak... is it not a bit strong?

I like a Bernaise or Cafe de Paris with mine now and again but I usually have it as it comes.

It is quite strong, that's why I love it. I find I don't like mild cheese sauce, it makes me gag.

I love blue cheese but would think it would overpower steak...then again I do pork stuffed with apricot and stilton so....

I like a Bernaise or Cafe de Paris with mine now and again but I usually have it as it comes.
In the end, after a bottle of wine, I did make the sauce with Yorkshire Blue. I combined a couple of recipies and although I do like punchy flavours I went a bit overkill on the sauce and overpowered the cheese with garlic and a few other things. Next time i'll have to restrain myself and keep to a simple blue cheese & creme fraiche sauce without the added extras.
It was still nice though



I had steak & asparagus with bernaise sauce last week

Blue cheese and garlic!! That sounds like heaven to me. As you can tell, I like strong flavours.

Steak au poivre is the french classic - cream and whole pickled green peppercorns.

That does seem to be a very simple recipe. I'll try that next time. As I said, I sometimes have to restrain myself as I tend to shot in a pinch of this and a dash of that, especially after a bottle of wine

Gorgonzola and pink peppercorn sauce.

Fry 1 tablespoon of pink peppercorns in butter for a few mins, pour 100ml white wine into pan and leave to sizzle over a high heat for about 1 min, lower heat and add Gorgonzola cubes (or any blue cheese) stir for a few mins until sauce is smooth. Simple and delish!

A very thin slice or two (or three) qquite near the end of cooking - so it's just melting at the end - sets off a a good bit off steak superbly

I just tried this. OMG can you say lush? Bit sickly though so not too much needed but that was totally high quality food. I had to do it in the microwave too as the gas isn't working (the sauce not the steak) and it was lush so i can't imagine how nice it would be if done on the hob.

I made it today and it was lovely.

Gonna go try PW's simple pork chop recipe tomorrow.

crumble creamy blue stilton.. mix with some single cream.. add to a pan of mushrooms and garlic and top your steak.. perfect!!

Me too and , and degsyhufc could do same only adding some St Agur ....... Its a beautiful soft and creamy Blue Cheese thats not too strong and melts easily in the juices
