Best flapjack recipe

What it says really. I've been experimenting with some flapjack recipes lately ... the best one was my one before last. It was lovely and gooey but unfortunately I can't find where I got that recipe from.

So I wondered if the good people of the food and drink forum could give me their best f/j recipe? I don't like it dry or crunchy but rather softer and gooey. Do you have a good recipe that comes out like that? I've already tried recipes I've googled but I'm particularly looking for a personal recommendation.

Also I'd be interested in good fruity flapjack recipes.

I don't use a recipe. They say that you should cut them as soon as you get them out of the oven as they supposedly get tougher the longer you leave them to cool.

Not sure about that myself. The last time I made flap jacks, I just melted some butter and honey and then poured some exotic muesli into the pot off the heat and stirred. Put down grease proof paper on a baking tray and then spooned it on. I baked it for about 20-25 minutes.

Like the idea of using muesli for variety. Would still love to get a tried and tested gooey flapjack recipe from someone though ...

The recipe I use is

175g butter
175g soft brown sugar
4 tbsps golden syrup
325g porridge oats
150g of whatever dried fruit you like

Bake at 180C for 40 minutes.

I guess if you like it gooey, don't use as much golden syrup and take it out the oven a little earlier.

I love flapjack, it turns out different everytime I make it tho, but hey it's easy to make and always tastes nice.

and I have to say it was truly scrumptious. Even my husband, who normally never eats flapjacks loved it - so much so I have had to make it twice since! I think it is the condensed milk that makes all the difference.

I think that chucking in a few sultanas would make a difference too.

I remember making flap jacks in primary school..They were yummy!! They smelled nice coming home, still warm

Add some syrup to make it a bit more gooey

Oats 8 oz
Demerara sugar 6 oz
Butter 6 oz
A pinch of Salt

Add oats, sugar and salt and mix
Melt the butter in a pan, and add to mixture
Stir well
Put in baking tin (20cm x 20cm)
Bake in a pre-heated oven 190C for 20 minutes
Allow to cool, and cut

This is the exact recipe I use for the yummiest flapjacks... except i never seem to get away with making one batch as I tend to be making for 50 - 80 hungry kids .. so tend to have to make 8 batches at once!
