Cooked chicken...ideas please!

Just cooked a lovely roast chicken for tea, unfortunately only hubby and I here, our visitors cancelled at the last mo, so going to be piles of cold chicken left, what can I do with such a pile of chicken for tomorrow night`s tea, not the weather for salad anymore!

How big was that chicken !?
Normally we eat two meals with 2 people from one chicken and make stock from the carcasse.

Chicken pie not an option, or a curry ?

We often make chicken pie - just cook some leeks and carrots or whatever you have, mix in a tin of mushroom soup and then pour into a pie dish. Top with pastry and there you go - yummy!

And you can always chuck in any left over veg you have from your roast too ... very flexible!

you can freeze it to use another time if you have a freezer and don't want to eat it now.

Curry, either Indian, Chinese or Thai.
Thai cocunut soup with shredded chicken.
Pasta bake - chicken in a tomato sauce & veg mixed into pasta. Or leave the pasta and put it on rice or a jacket spud, or even over chips.

deep filled chicken sandwiches or wraps. Burritos or encilatas.

Chicken, mango and feta salad. Crumble some feta in with the chicken, add sliced mango. Mix up some plain yoghurt with curry powder, mango chutney, finely chopped garlic and some fresh mint. Add together. Yum !

mmm does sound lovely..may try that as well, that`s the sort of salad I don`t mind,

Chicken Stir Fry.
1 Garlic Clove crushed
Raw ginger grated if you have it ( I keep it in the freezer and grate it as necessary)
Thinly Slice the following:
1 Onion
1 Carrot
Any other suitable vegetable e.g. mushroom, celery, pepper (red or green), cabbage
Stir fry the above and when nearly cooked add the chicken cut into strips, soy sauce, salt, Chinese spices if you have them, and any leftover chicken gravy.

Add any other chinese style vegetables that you have in your store cupboard such as bean sprouts, water chestnuts etc. for that authentic oriental taste.

Serve over noodles or plain boiled rice.

Healthy chicken kebabs

Make a small mix of coriander, mint, finely chopped chillis, garlic, spring onions, and lemon juice. This should be almost paste-like in consistency!
Toast & slice some pitta breads in half across the breadth, then open them up.
Add the chicken, some fresh salad, and potentially additional chillis if you like the heat, sprinkle with some fresh pepper
You now have fresh, healthy kebabs!
For a bit of variety, add some houmous into the equation!
