I think I have perfected mine, but would be interested to hear other peoples recipes.

I always make the mash with lots of butter, a pinch of nutmeg and cracked black pepper.

Then mince, a tin of strained chopped toms, julienned carrots, shallots, leeks and lashings of Hendersons relish.

I always have to have very mild cheddar on top too, though I know this is contoversial.

Serve with green beans, peas and extra onion gravy.

I've never heard of hendersons relish ?

Mince, onions, carrots, sweetcorn, tomatoes, tomato puree, little stock, dash of tabasco, worcester sauce, seasoning, mash with lashings of butter, mild and mature cheddar on top. some tomato sauce and hp sauce on the side.

I've never heard of that relish either.

This may be a little idiosyncrasy of mine but I hardly ever have two green sides on a plate. I would either have just peas on the side or have peas in the pie and beans on the side

For the cottage pie, I don't really measure so every meal (mince, cottage pie, bolognaise etc) comes out slightly different.

Hendersons is a northern thing (small factory in Sheffield), but bigger supermarkets stock it.

I couldn't live without it, it's amazing.

It can't be that northern if it stops at Yorkshire

Is it a veggie Worcestershire substitute?

The best one I ever made was with leftover roast beef, gravy and vegetables and fresh mash.

Mine is just mince, a bit of beef stock, a squeeze of tomato puree. simmer for an hour then mash on top and in the oven for 20 mins.

Keep the simmering water for the gravy.
