Making vegetables more interesting?

i want to make a vegetable side dish.
i usually just boil mixed vegetables in 1cm of veg stock for about 3 minutes. but im bored of this now!
does anyone know any flavoursome and easy ways to make vegetables more interesting

Garlic, Onion, decent vinegar (cider, sherry etc), herbs + chilli if you like heat.

I love veg! They're not boring at all.

My current favourite is a big baking tray with a little olive oil, some garlic, a chopped onion, a couple of peppers, loads of cherry tomatoes, loads of basil and any other herbs I have, roasted up for a bit in the oven. OM NOM NOM.

Maybe you should have watched River Cottage tonight. It's all about veg.

Savoy cabbage is gorgeous when done like this:

Shred the cabbage and lightly boil or steam it.

When tender drain and set aside.

In a saucepan saute a finely chopped onion or shallot, with a couple of chopped smoked bacon rashers, in butter until softened and lightly coloured.

Add the strained cabbage to the saucepan, mix well then stir in a couple of tablespoons of double cream.

Check for seasoning and add ground black pepper and salt if necessary to taste (careful because the bacon is salty).

Delish!

Stuff huge mushrooms with spinach and goats cheese.
Chuck seasonal root veg (carrots,parsnip, suede, squash,pumpkin) into a baking tray with oil, garlic bit of sea salt and whatever herbs and bake for 30-45 mins,
Stir fry broccoli, cabbage,onion, garlic and chilli in oyster sauce.....the lists are endless.....

I tend to steam my veg as it seems to taste better and keeps its shape.A few (unsalted) chopped nuts can perk up a plate of veg.

just add some butter and chopped garlic before serving makes a change. - I dont have butter on my veg normally so its a treat

Parboil brussels sprouts for 6-7min, quarter them, stir fry with bacon bits and ginger.

Broccoli and stilton, with almonds or walnuts.

Cabbage with butter and white wine

Sliced aubergines marinaded in red wine vinegar, olive oil, tarragon and thyme.

Roasted butternut squash and peppers, with bayleaf and oregano.

Mushrooms stuffed with breadcrumbs, shallots, almonds, garlic, sage and parsley.

Creamed spinach with garlic, dressed with granary croutons.

Leeks braised in a vegetable stock.

Jerusalem artichoke hearts in a cream sauce.

Jerusalem artichoke leaves with guacamole for dipping.

Ratatouille.

I don't get what's so boring about veg, i just steam them them slap on a slab of butter, yum. Otherwise i lightly stir fry them, that's about it and they alway taste good to me.
