You could try doing what I once got served in a restaurant in Greece as a "vegetarian special" - a block of deep fried halloumi. Heart attack on a plate, that was

I don't think there's much wrong with just slicing, cooking and eating it myself,.. I adore it.
It does have a really good affinity with mint, and lamb. I love to make koftas or burgers and use hallloumi as a topping.. http://www.greedyrosie.net/2009/08/09/koftas/ or you could make some halloumi and veg kebabs (like pepper and mushroom) with lemon and mint dressing. Nom. I could do with some squeaky cheese naow! |

Really don't get it, it's not that tasty. And squeaks when you eat it. |

Cut it into slices, dip into seasoned flour (with a bit of chilli powder, salt, pepper), then beaten egg, then smashed up cornflakes, then fry in a bit of oil. Serve in flour tortillas with salsa, guacamole, crisp lettuce and some lime mayo. That was dinner tonight!

I make a halloumi salad to go on the side of BBQs in the summer - sliced and griddle halloumi sitting on a salad of really crisp salad leaves (like romaine or little gems), peeled, pithed and finely sliced oranges in rounds scattered with pumpkin seeds, pine nuts, finely sliced spring onion and dressed with olive oil and orange juice. Mmmmmmmm!

We have it with a honey, lemon and olive oil dressing, with roasted in the oven with vegetables (peppers, asparagus, red onion, mushrooms etc), and also with melon and green beans in a salad

We love halloumi cheese. We also fry it:
Pass through seasoned flour (pepper, parsley, thyme and marjoram; no salt). Fry on a hot griddle until golden brown. Serve on a bed of mixed salad leaves (spinach, water cress, rocket and radicchio) and with lightly pan-toasted ciabatta. Accompanied with a simple vinaigrette. |

I had vegetarian "Fish and Chips" in a posh pub last weekend and it was delicious.
I haven't made it myself yet but this is the closest recipe I could find. http://hubpages.com/hub/Vegetarian-fish-and-chips |
