I'll definitely second that!

I'll also add:

Bird Guhl-Antony and the Johnsons. Always makes me cry when I listen to it.
Underneath the Stars-Kate Rusby.
As Time Goes By-Billie Holliday. Such a simple arrangement but is extremely poignant and so emotional.
Hallelujiah-Jeff Buckley. Obvious
Perfect Day-Lou Reed. The saddest and most melanchollic song I've ever heard, makes it incredibly beautiful.
Vincent-Don Mclean. Every single word is there for a reason.
Fix You-Cantamus. An all girl's choir singing the Coldplay song gives it incredible poignancy and meaning and the harmonies are beautiful in their own right.

Sigur Rós have a lot of lovely songs. My favourites from them are Untitled 3 and Ára bátur (which is an epic song!)

Bat For Lashes has a lot of really beautiful songs, especially from Fur and Gold, such as Sad Eyes and I Saw A Light (one of my all time favourite songs).

Björk, despite her being seen as weird and quirky, has some beautiful songs, such as Jóga, Unravel and much of Vespertine.

Then we have the less obvious beautiful songs from Skunk Anansie, such as Hedonism and You'll Follow Me Down.

Goldfrapp, especially earlier in their career, with songs like Utopia and Brown Paper Bag.

I could go on but I'm off to get drunk!
