There is something of a modern fashion for inventing sweet cocktails, inevitably vodka and fruit juice-based, targeted at parties of women out on the lash.

The 'Cosmo' is a good example. <shudder>
However, most of the classics (and I'm talking primarily gin, whiskey, brandy or tequila-based cocktails) should be well-balanced, sharp but not sour. The Tom Collins is a good example; fresh lemon juice provides acidity and sharpness, tempered with the simple syrup. Old Tom is a slightly sweeter, 18th Century-style gin so there's no need for much sugar and the drink is topped up with soda water.
