'Alternative' cupcakes

I have recently got into making cupcakes. I am loving experimenting with different flavours and icings, and of course eating the results.
My friends, family and colleagues are also benefiting.
My question is does anyone have any recipes for specialist diets such as gluten free, low sugar, low carb, low fat, vegan ?
If so I would love to hear them !

I use Pura Spread -which is sunflower oil based - instead of butter for the cakes & icing (if using buttercream) lately so that if Lucy manages to nab a bit off the kids then we're not throwing a panic.



This in itself makes them that bit lower in fat and to be honest I've not noticed much of a taste difference

funny i was just about to start a gluten-free thread anyway i made some bread from http://www.elanaspantry.com/blueberr...ream-cupcakes/

She has a cupcake book too.

I also used to make this recipe http://pinchof.blogspot.com/2008/07/...onut-cake.html but as muffins, you could try adapting them.

Also, this one is very basic( low carb) but adaptable, you could try adding cocoa powder.

Chloe Coscarelli won one of the episodes with her vegan cupcakes.

It's brilliant isn't it I stumbled across it recently too, the o/h hates it. Have you seen the one with Duff from Ace of cakes judging? Love it.

Funnily enough my husband hates it as well.

Yep, I've seen the one with Duff. It's a brilliant show.
