You can watch the excellent 'Cooking with dog' (not what you think ) series on Youtube. There, you can find several Japanese Udon recipies, including how to make the Udon noodles (Teuchi Udon) themselves. The ingredients might be hard to get though.

Thanks a lot for the recommendation. I watched two videos. The 1st one was Ebi Fry. The 2nd one was How to make Nabeyaki Udon. I will give the Udon recipe a try, but skip the cooking of shrimps because her method uses too much oils, too costly for 1 serving only. I will keep watching for the other Udon recipe video.

Ooh I love udon noodles. I used to add them to miso soup with wakame seaweed and spring onion. Very nice!
