apple question - help needed!

Hi,

Can you make apple pie using normal red apples? Or does it have to be cooking apples?

I have millions of apples and want to use them all up.

Any idea if this will work or not?

Yes you can but I would go easy on the sugar as they will be sweeter than cooking apples. They may go a bit mushy if overcooked but otherwise should be fine.

We have a small orchard and every year I have a ton of apples to process. Normally I cook them in batches, and spend a couple of hours doing several batches before I'm bored stupid and never want to see another apple
I found the best way is to use a large open skillet with a lid, just peel and core the apples, rough chop them. My skillet holds about 8 chopped up apples, I dot with butter and use about 2 tbs of sugar, put the lid on and cook for around 5 mins. Never add water to apple as they just turn to mush. Once all the juice has come out of your apples ( this is also the best time to test for sweetness add more sugar if required), take off the lid turn heat up high and cook off some of the juice, reducing it until it goes thick sticky and almost toffee like.

And if they are a bit sweet a good squeeze of lemon juice will counteract it nicely with some sharpness.
