Re-using cooking oil.
Yesterday I deep fried for the first time. Not having a deep fat fryer, I used a frying pan with a whole bottle of oil. It was chicken pieces I cooked (very nice they were too) but now I'm left unsure what to do with the oil.
I remember my mum had a chip pan which came out most days of the week, and the oil was frequently topped up but seldom changed - but the oil which has had the chicken in it is dirtier, so I don't know if I can re-use it? It seems so wasteful to get rid of it after one use though! What should I do - re-use it? Try to keep some of the cleaner oil at the top? Or just get rid of it? Oh and how do you dispose of it? It's not going to be a trip to the the recycling tip is it? Does fried chicken always pose such a problem or am I making a mountain of it?

I don't do any deep frying but I remember my mum used to let it cool and then pass it through a sieve back into it's original container. I think it was probably re-used about about 5 or 6 times.

Sieve it through a clean cloth, or muslin and keep it in a container, it can be used a few times before you throw it away, I usually throw it in the compost bin, veg oil.

I use a metal strainer & re-use it 5-6 times. If it gets really claggy, mix with with corn, oats, leftovers to make cakes to put out for the birds.

You should NEVER use veg oil for frying, including olive oil. Heating it makes it very toxic. Only use beef, goose or pork fat for frying.

I have a double deep fat fryer. One with crispy n dry and the other with beef dripping.
I reuse until the look, smell and taste of the oil starts to overpower the food. I get a good couple of months out of it and that's a good couple of dozen frys. If it was in a restaurant or such then obviously it wouldn't be acceptable but for my personal home use i'm going to get the most use out of it before I replace it. |

Better tell most of the take aways in the country then as most of them deep fry using veg oil.

Off-topic from the veg oil but as for olive oil, I can't remember who it was but some chef said on a tv show before that it was totally fine to use the cheap olive oils from supermarkets for everyday use, such as frying (probably not deep frying as it would be a waste).
