Surely if you're unemployed, you're just unemployed. The job title wouldn't follow.

If you wanted to mention the job title, it would be "former head of communications"

Wasn't that for the purposes of The Apprentice though i.e. to clarify that he was unemployed as well as his background? Nothing wrong with defining or marketing yourself with a view to the direction you wish to go in. That's why you might have various CVs...
