Sea Bass

Hey all

I was watching Nigel Slater's Simple Suppers last night, in which he cooked whole sea bass with lemon and butter on a BBQ, wrapped in foil.

I was just wondering if this recipe would work if the fish were to be baked, as I don't quite fancy rigging the BBQ up in this weather

Yes it works just as well. Depending on the thickness of the fillet 10-12 minutes in a hot oven.

Edit; just seen you said a whole bass, i've only done it with fillets.

Thanks for the help guys I'm going to give it a go and see how it turns out

Now, has anyone got any ideas for side dishes I was going to serve the bass with some new potatoes and a green salad, but any more exciting suggestions would be welcome

I serve mine with chive mash & green beans.

To contrast the soft texture of the fish I serve mine with small cubed rosemary and garlic roast potatoes tossed in olive oil before roasting. On the side usually green beans.

Had Aldi frozen sea bass (from the Aegean Sea) last week, lovely baked in foil in the oven with butter & parsley.

Are they skinless fillets?

I saw something similar in Lidl, along side the posh grub (pheasant, quail, goose etc).

Little bit surprised to see NS use sea bass in his 'unsung heroes' programme - sea bass is blooming everywhere these days and it's pricey too.

It is flavour of the month, like pork belly but it's not that pricey. ASDA were selling them whole for £1.80. That's a pretty good price. I was happy with one fillet for lunch.
