A friend recently gave me this one for hot soup, its scrummy!
225g / 8oz red (bell) peppers, seeded & sliced
1 onion, sliced
2 garlic cloves, crushed
1 green chilli, chopped
300ml / 1/2 pint passata
600ml / 1 pint vegetable stock
2 tbsp chopped basil
Put the peppers in a large saucepan with the onion, garlic & chilli. Add the passata and veg stock and bring to the boil then lower the temperature and simmer for 20 - 30 minutes. Separate the liquid and vegetables and blend in a food processor until smooth (you can pass this through a sieve if you prefer a very smooth soup).
Combine the vegetable purée and liquid to a clean saucepan, add the basil and heat until warm.
I personally dont blitz it because I like chunks
Its also lovely if you put some cooked pasta in too!
