Chocolate truffles with longish shelf life
I'm planning on making some chocolate truffles as pressies for some of my friends at work but the recipe I normally use, uses double cream.
Because of when I'll be giving them out (more than a week before Christmas) I need to find a recipe which doesn't use double cream (so they won't go 'off'!). Has anyone got any tried and tested recipes using condensed milk in place or cream, or any other alternatives? There seem to be quite a lot on the internet but I'd ideally like to use a recipe that someone else has tried, and liked! Thanks

Sorry to bump, but just wondered if anyone did have any tried and tested recipes for truffles without fresh cream.

I've never had any problems with shelf life of truffles because the alchol preserves them. Obviously the fresher they are the nicer, as the centers start to harden and dry after a couple of weeks.

I think they last quite a while even if made with double cream. But if you're worried, when giving them out, just tell them they are best stored in te fridge?

When I want them to have a longer shelf life, I just use the longlife creams rather than fresh - doesn't impede the taste, as the chocolate and alchohol gives them most of the flavour - the cream is just for texture / consistency
