I'm going to give Nigella's jerk chicken a bash:

However the recipe calls for dark rum. This is something I don't have in the house and never will. Any ideas for what would be a good subtitute?

Why not just get a minature?

Most off-licences will have miniatures, they may not have a miniature of everything but they should certainly have dark rum.

How much would they cost?

Lookin at the other ingredients I might be tempted to replace it with a bourbon. (bit of extra sugar as well maybe)

Don't have that either. Will buy a minature, I think. Oh and to the other poster, I don't have Bacardi because it's yock.

About 2-3 quid. I've seen 'em at 99p though.

I'd be tempted to just leave it out of that recipe to be honest, it will most likely be buried by the other flavours anyway. I'm surprised she doesn't specify scotch bonnet chillis, jerk isn't jerk without them!

Are they hot chillis? Because she said she didn't want it TOO hot.

Yes they're rather hot, but to be fair that recipe is more an interpretation of jerk style rather than fully authentic. Plus they can be a bit tricky to find sometimes, depending on where you live.

Miniatures (when available) are soooo overpriced. I think the supermarkets are missing a trick there, esp around Christmas when people are making cakes & puddings.

I'm often short of one shot of a specified alcohol, but as I make my own drinks like sloe gin & similar, I usually substitute some of that.

I would buy one of the small bottles, just because it's better value for money. I don't use rum very often, but it'll happily sit in the cupboard until a recipe calls for it.

Buy a whole bottle (litre if you can), use what you want for cooking and then send the rest to the 'FCARC' (Fat Controller Alcohol Recycling Centre).

Here at FCARC we are experts at recycling alcohol using an environmentally friendly, biological process, with the only by-product being so safe it can be passed directly into domestic sewers.

Do you have a pub nearby? They may let you buy a shot.

Rather than us suggest things why not say what you DO have and then we can tell you from that what the best would be, or we could be here a while.

I don't understand what you mean really. I didn't mean it had to be alcoholic and the purpose of the thread was to see if anyone had ever successfully used any other kind of substance as a substitute.

if it's in a recipe, surely any spirit will do - whisky or brandy, or maybe a liqueur.

rum is a little sweeter, as it's sugar-based, so add a bit of sugar maybe.

Muscovado sugar might work best.

You didn't say that in your op though so people will be thinking you are wanting to substitute rum for another alcohol. So they suggested some and all they got back was 'I haven't got that either'.

So if you were wanting recommendations for which spirit to use instead, an idea of what you did have would have been a good idea.

60 ml isn't a lot though so as said, probably OK just to leave it out.
