Bacon and Sausage
I think I went overboard and bought a few packs of each, but forgot to use them upto christmas day.
In the last week i've had bacon sarnies, a fry up and a sausage and bacon sarnie today. 6 cumberland and 8 peri peri and a pack on smokey back bacon. Don't want to freeze them as already have a freezer chocco full. Any ideas to use them up? or just post your favourite meals and love of porky products

Im glad you done this thread cos i was gonna ask..
![]() Is it OK for me to run the bacon under the tap, to get the salt off..Too salty.. ![]() I am doing a dinner with fresh bacon and sausages , and was gonna do my own ones tonight ?. WIll it get rid of the eccess salt ? |

I suppose you could soak it in water to get rid af the salt. I know you can do that with gammon/ham.

Old fashioned bacon pudding ? Suet pastry rolled with bacon like a swiss roll and steamed for a couple of hours.

Bacon
When I have some to use up, I often just put it in pasta, bolognese etc. Don't tend to use it that much other than for fry ups/bacon sandwiches ![]() - Wrap bacon around stuffed chicken breast (philadelphia is a good filling!) - Bacon & mozzarella twice baked potatoes - Lentil & bacon soup Sausage - Toad in the hole (one of my fave dinners and v. easy to make) Other than bangers and mash, and adding them to pasta, I can't actually think of anything other recipes I make with sausages. There's always sausage casseroles and hotpots you could try. Edit: Bacon & sausage quiche would be nice! |

Got around to opening the other pack of sausages last nigh.
Ashfield Farm Peri Peri Sausages from ALDI wow, they're good. and they're SPICY!!! still got the tingle in my mouth 10 minutes later. They actually reminded me of the smell of savaloys when raw and when being cooked but then the spice kicks in. Last night I made three of them in to a burger and had them on a oven bottom muffin with garlic, balsamic mayo, rocket, watercress and spinach salad, balsamic glazed sauteed red onion and tomato. plus chips ![]() Today i've just had a couple with a dip of burger relish, sweet onion relish and balsamic glaze. Both were very nice. They go well with balsamic

iw posted a lovely recipe for a sausage and pasta dish.
Although I think it only works with sausages with a +70% pork content. Basically you fry some diced onion and garlic is some olive oil and then take the sausage meat out, roughly chop it into pieces and add to pan (lightly cook to seal the meat) then add chopped tomatoes, herbs etc and simmer. Meanwhile boil up your pasta, drain and then combine altogether and add some fresh basil and parmesan to serve. It's a wonderful dish, so quick and easy but tastes like you've spent all day making little baby meatballs

One of my favourite sausage stand-by's is my quick sausage and bean curry.
Grill the bangers until brown all over. Meanwhile chop and fry an onion, some garlic and chillies with a couple of spoons of curry paste. When the sausages are done chop them up and throw them in the pan. Add a tin of beans and whatever extras you usually put in a curry. I usually add some peas as well. Add water to get the consistency right. If you can't be bothered to do rice then scrub up a potato, dice it then microwave it for 5 minutes in a bowl with a little water. Chuck it in with the curry and simmer for 10 minutes. |

Coddle-a traditional Dubin recipe although I'm not a big fan myself. Spuds and onions along with bacon and sausages and carrots if you like in a pot with salt & pepper. Bring to the boil then simmer like a stew. If you don't like the clear soup then throw in a couple of oxos.
