Salad Dressings?

Hi Everyone, and a Happy New Year to all of you.

My family and I recently went to a restaurant (first time we have frequented this particular one) for our traditional Christmas Eve meal. Well for the starter I went for something different instead of the usual soup, and it came with a side salad. Now I am not usually a salad lover, and it more often than not gets left, but this one seemed to have had a dressing that made it scrumptious - I think it was something with a hint of balsamic vinegar in it.

And so to my question, has anyone got any good salad dressing (ingredients and quantity - for 1 unfortunately) also what type of salad ingredients do people use in their side salads?

I would really appreciate any tips - even shortcuts are welcome - that people can give and hope this is will be an addition to my healthier eating future.

Dessing is usually 1 part acid to 4 parts oil.

So just use the vinegar of your choice. I tend to add more vinegar as I like punchy flavours.


From there it depends where you want to go
Do you want a mustard dressing?
Do you want to use anchovies?
Do you want it thai style?


Here is one I like
1 tsp thai sweet chilli sauce
1/2 soy
2 tsp balsamic
2 tsp olive oil

That's an estimation. Change the quantities to suit.

Beetroot with green sauce

For the green sauce: pick and finely chop the mint and parsley leaves, putting them in a bowl with the capers, shallot and garlic. Mince the anchovies before adding them to the bowl with the mustard. Add olive oil so it is just visible beneath the surface of the mixture. Everything slightly collapses, so don't add too much. Splash the lemon on sparingly. Mix and leave to stand.

3 tbsp fish sauce (nam pla)

3 tbsp freshly squeezed lime juice

1 tbsp rice vinegar

2 tbsp caster sugar

1 tsp very finely chopped garlic

2 red bird's-eye chillies, finely chopped

Yeah, my dad always made his own Vinaigrette dressing. - Balsamic Vinegar, Olive Oil, Dijon Mustard and some Garlic.

Can't remember the quantities though, think it was something like a little bit of balsamic, mainly oil, and a spoonful of mustard. Don't recall any herbs or spices added in there, but it was a long time ago now.

75ml raspberry vinegar
75ml Grapeseed oil
2 tbs honey
1 tsp wholegrain mustard
1 tsp sesame seeds
season to taste

One of my favourites..

75ml raspberry vinegar
75ml Grapeseed oil
2 tbs honey
1 tsp wholegrain mustard
1 tsp sesame seeds
season to taste
I bought some raspberry vinegar and it makes a lovely dressing with a slightly sweet edge. Your recipe sounds lovely - for my taste I would go a little easier on the honey but that is just my taste.

I never measure but just judge 'by eye'.
I use Balsamic Vinegar and good Olive OIl.
Or some Chardonney Vinegar with a teaspoon of wholegrain Mustard and a drizzle of Honey.
Or Balsamic Vinegar and Pesto (shaken in a clean jam jar with the lid on).
Taste and season with salt, pepper or sugar; or add some more of one of the ingredients to adjust the flavour.
Half Ketchup, Half Mayonnaise makes a nice Marie Rose Sauce with a little Lemon Juice if you have it.
A girlfriend of mine made a dressing in the blender at Christmas of roasted red peppers (you can buy them in jars) Olive Oil; fresh crushed garlic, salt and pepper. It was yummy.

1 tablespoon red wine vinegar

½ teaspoon Dijon mustard

ground black pepper

4 tablespoons olive oil

1 short lump of fresh horseradish, for grating
