I think i'm right in saying that over most of the US they use streaky bacon.
[LIST][*]Is it smoked?[*]What "flavour"? (cherrywood, applewood, hickory, maple etc)[*]Do they use back bacon?[/LIST]

Yes! I'd never even had unsmoked back bacon until I moved here. You can have thick cut, and hickory smoked, maple flavored, peppered, etc. I think it's also safe to say that it varies from region to region.

When I've been in the States, I've really really liked what they call 'Canadian bacon' - but I've never been able to find anything like that here. It's nothing like our bacon - does anyone know what that is?

Breakfast Pancakes. Breakfast pancakes made with sweetcorn, especially nice with maple syrup and bacon

From Wikipedia: "Canadian bacon, a US name for two different pork products - back bacon and a smoked ham".

American bacon is usually thin sliced cured/smoked/flavored "pork belly" streaky bacon.

Most 'Canadian bacon' that you find in US supermarkets is thick, reformed ham, but the good stuff (what you get with a good eggs benedict in the US) is the same as what we'd call 'back bacon medalions' in this country: basically the disc of lean meat out of a cut of back bacon. The medalions that you can buy in Lidl are particularly good.

I tried "American" smoked bacon for the first time this Christmas and it was AMAZING.

I looked for the same brand in the shops after Christmas and they don't have it anymore

I like american bacon , the smell is gorgeous and it crisps up lovely, I've bought back a couple packs of bacon when I visited the states, you dont get that white slimey watery goo either...although most of their bacon is *streaky*...Sainsburys do an american bacon and its lovely....Begins with an O ..... *senior moment*

There's more an more choice in the supermarkets these days for traditional dry cured bacon (back or streaky). But it's very expensive I guess you get what you pay for.

But I really couldn't pay £3 for four rashers.

Whenever i've had bacon in America it's been cooked to ridiculous crispy-ness. Doesn't do it for me.

Streaky bacon kind of has to be well done because of the fat to meat ratio. If not then you've got half chewy/greasy fat.

Most 'smoked' american bacon isn't actually smoked, its pumped full of chemicals to give it a smoky taste.

try France - there's nop bacon as we know it, as far as I can see

M&S Streaky is very good - not much fat at all!

As an American, I've never been a fan of the bacon here. Any part of the animal that is that fatty should be thrown out.

Sure they do, but I'm not personally a huge fan of those either (although some sausages are better than others). Note when I said "here", I was referring to streaky American bacon. I've never liked it.
