Eggs Benedict - anyone else actually prefer it without the hollandaise sauce?
I like the simplicity of the poached eggs and whatever type of ham and bread used. I suppose that's not really Eggs Benedict though, is it? Maybe I've just never experienced a really good hollandaise sauce.

I adore poached eggs. I've only had eggs benedict a couple of times, and made it once, and it's been fabulous every time. I love a good hollandaise sauce. Without the sauce it's still delicious, but I'd agree that it isn't eggs benedict then.

I love poached eggs. Actually, I love eggs in every form bar omelettes and quiche. I'd eat eggs every day without any form of guilt.

I use the Maille Hollandaise Sauce from the local supermarket.
Tastes OK to me. |

Me, I really don't like it, it's too rich and creamy and ruins the egg and ham experience, same with eggs florentine.

I give the Maille Hollandaise a good stir in the jar before putting on the eggs.
Maille have changed the recipe for their Hollandaise Sauce recently according to the label. Not as rich as the old version. |

I love the sauce, and I sometimes like to replace the ham with smoked salmon.
