I am going to start making my own salads to take to work to save a bit of money rather than buying the pre-bought ones.

Going to go and get things for it tonight. All I can really think is lettuce, cucumber, cherry tomatoes, peppers, red onion and something to go along with it like prawns, chicken or tuna.

Does anyone have any other ideas what I could have. Would like to try and keep it low fat.

A simple dressing.
3 tbsp olive oil
Some salt and pepper.
1 tbsp acid, one of white wine, red wine or balsamic vinegar, or lemon juice.

I love grated carrot and sweetcorn in my salads, adds a bit of sweetness.

I like fresh coriander in mine.

This is what I had for my lunch today
Lettuce, shredded chicken breast, lettuce, onion, cucumber, a few anchovies and a whack of fresh coriander.
Doesn't need any more dressing because the anchovies are packed in oil and vinegar and the bit that comes out of the pot with them is enough to dress the whole thing. There's not even a teaspoon of liquid.

My greengrocer cooks his own beetroot and it's not pickled, so one of them, chopped up in a tupperware, then added to another tupperware of lettuce, onion, peppers, coriander and a mackerel fillet when you're about to eat it makes a lovely lunch. The beetroot is wet enough on its own that you don't need any dressing on that, either. Though you need to take it in separately, otherwise the whole thing arrives in work looking very weird.
And beetroot with mackerel is a fab combination.

You can buy jars of roasted peppers in oil at the supermarket and they make a lovely addition to any salad with chicken and basil and onions and lettuce and cucumber.

This is going to sound odd, but it is lovely.
Cold poached or tinned salmon with cucumber that you've cut with your potato peeler, so you get right skinny little slivers of it. That makes all the difference, I think. I have that with coriander - of course! - and a squirt of lemon juice.

I don't bother with tomatoes at this time of year because they're all imported and dear and they taste of nowt.

Bloody hell. I'm hungry now.

Grated carrot, sliced raw mushrooms, different sorts of lettuce eg lambs lettuce, water cress, cress, avocado ( yes calorific but filling and good for you) celery, mange tout and mini sweet corn cobs. For protein add a little humous or tzatiki or a couple of small falafal.

I like a bit of fruit - grapes, apple, orange, mango.... also you can add olives, nuts and seeds......endless

My current favourite...

Put a bit of dry couscous - the pre-cooked sort - in a bowl. Add a bit of boiling water from the kettle. Allow to absorb the water and cool a bit. Stir in a bit of olive oil and lemon juice. Chop in any combination of small diced cucumber, tomato, onion, flat leaf parsley (LOADS), chilli, leaf spinach, coriander etc and season with salt and pepper.

Yum! To give it a bit more substance you could always add some tinned lentils or chick peas and bung the whole thing in a wrap lined with a slight smear of hoummous. Although then I guess it wouldn't be a salad anymore.

leaves - rocket/watercress/romaine/coriander

fruit - orange/persimmons especially nice/pomegranates/ even strawberries and grapes

cheese - feta/parmesan

nuts/eggs etc

nice dressing


I love the Maxi-salds you get in France. they often do them with large saute potatoes/ croutons/lardons/ poached egg etc.

anything goes really
