Soggy Tofu mess
Ok so i've just bought a block of tofu but im not sure how to cook it properly. The first time i tried to cook tofu it turned into a soggy mess despite buying the firm stuff and draining it according to the instructions. Is there anyway to cook it so that it doesnt turn to slime?

Chop into chunks and fry till golden then add to recipe.

Dry it a bit by laying it on and covering with kitchen paper towel. Press it a bit to get out the outside moisture. Then proceed with cooking or marinade. It IS fragile so turn carefully when cooking.

I like to marinade it in mango chutney and fry.

Depends what type you bought - was it 'silken' tofu? There are two types and one does says but 'firm' but it is still very very soft and silken and won't crisp up if you fry it.
Then there is proper firm tofu whcih is much more robust. |

After being drained it really needs to be wrapped in kitchen towel, or a tea towel and pressed for 30 minutes at least for the best results.
I get my tofu to go extra crispy by coating it in cornflour and spices before frying |

I've never bought the white stuff. A friend who uses it asked me to try it, I thought it was yuk.Too much sliding round the mouth for my liking. I have however got into the pre fried tofu. I use them to bulk out veg or meat stir fries, I love the way it takes on flavours. I buy mine from the Chinese Supermarket in Brixton market, the tofu are lovely inch squarish chunky pieces that can be cut down depending on what's being stir fried. I won't use store bought fried tofu, they are are far too small (centimetreish cubes) and also salty.
