Olives, some good bread and some San Marzano olives, drizzled in Olive Oil.

Cover a tortilla with some rocket leaves. Pile on plenty of thinly sliced red onion, and crumbled feta cheese. Drizzle over some olive oil, season well, and bake in a hot oven for about 6 minutes. Cut in half and fold over like a quesadilla, and enjoy! It's a nice quick snack, and a good way of using up bags of rocket and tortillas which are a day or two past their dates.

I like feta, but actually prefer a French soft sheep cheese, it's called Xetabel, I think. The similar consistence, but stronger flavour

With roasted vegetables, chilli and mint.
Spinach and feta in filo with spring onion and mint.
Roasted butternut squash and Puy lentil salad with feta.
Pea frittata with the feta grilled on top.
With courgette fritters.
Greek salad with tomatoes, black olives, cucumber, red onion and dill and mint.

.....I LOVE feta!
