I'm just watching Benidorm and switching between the sky box (old banger) and the Humax. No idea why but no contest, sky box wins hands down. Sadly.
ITV1+1 looks better on sky box than Humax
Both Foxsat-HDR and Sky are using the same source.
Are you sure you are watching the same ITV region on both?
ITV is known for setting different bit-rates between some regions, which will affect picture quality.

I would assume (everything else being equal) that as ITV1+1 West is on a transponder with only 3 other SD channels and 1 HD channel (which is equal to 3 SD channels) they have more of the 33 MHz bandwidth to play with than ITV1+1 Central which has 9 SD room-mates in 26 MHz. So theoretically West should be a better picture.

How are your boxes linked to your TV?
Generally I prefer the picture from the my Humax Foxsat than my Sky box. The real difference in my case is that the Humax is doing it's own upscaling whilst the Sky box outputs SD and the TV upscales.

So if the TV has a really superlative upscaler the Sky box can, indeed, look better than the Humax.

Yes - Choose 'original' using V-format button on remote.

Try connecting the hdr by rgb scart for SD and then compare. The hdr is known to use a degree of noise reduction on hdmi even when the tv supports 576i over hdmi (some only support 576p so forcing the hdr to de-interlace)
Humax Foxsat HDR and Sony KDL46x-4500
With my Humax set to output at 'original' the Sony TV gives a great picture in SD and fantastic picture in HD.
Didn't like the picture though when the Humax was set to do the upscaling.

I had my Hummy set to 1080i but changed it to "Original" after getting advice on the AV Forum site. My TV still shows the Hummy as being 1080i though.

Using the V-Fomat button on the remote you can set the Humax to output 576p, 720p or 1080i. I always advise people to experiment and make their own mind what combination (TV / STB processing) offers the best picture. If you have one of the top brands of TV then their in-built upscaler will probably do a better job. If you have a cheap supermarket brand / Vestel derived TV (for example) then the Humax upscaler will most certainly be superior.

If your display supports 576i over hdmi then it will also be an option

Original means the box will output the original source provided the hdmi connection reports it as supported. Some TV's do not report 576i as a supported format hence only 576p is reported.
In this case SD is reported as 576p rather than 576i, all HD sources either 1440 x 1080 or 1920 x 1080 as 1080i
