I'm cooking a Chinese tonight and am going to grate some root ginger into it, a bit like in a way one feels the need to add garlic.

Are there any fans of the ginger root here?

Of course it's not always called for, but to some meals it adds a very welcome kick I feel.

I love the smell and it's definitely an ingredient with life.

I love it in my green smoothies and also add a dash of ginger when juicing carrots or apples.

I would buy fresh more but I tend to use a bit then waste the rest so I use Lazy Ginger. I know it's not the same but it lasts forever and you usually add a bit of vinegar to sauces anyway.

I only buy the thumb or so i am going to use, and just use all of it in the recipe i bought it for. If we end up not eating that dish, then it lasts a couple of weeks anyway so there are plenty of opportunities to use it again.

I've not tried this with Ginger, but why not grate the whole root and then portion it into an ice cube tray.

Top off with water, then freeze as normal.

When you need it for a recipe, just drop 1 or more ice cubes into the pot.

Saves wastage.

I always keep any leftover fresh ginger in one piece in my freezer, whenever I need a bit I get the whole piece out, stick it in some water for 10 mins, cut off how much I want and refreeze the rest. It does get a bit soggy but you can squeeze the water out and use as normal (have to squeeze the liquid out of Lazy Ginger so more or less the same thing

Another tip is to use ginger with a microplane grater. You don't even have to peel the ginger before grating it. I haven't got around to buying a microplane yet though.

I keep ginger in the freezer and grate as much as I need each time, then put it back.

We try to sneak some ginger into our home cooked meals whenever possible. It's great for your digestive system.

I didn't used to think I liked it, but lately I've become obsessed with making hot and sour soup, and it just wouldn't be the same without the tonne of ginger I put in.
