I made my own variation of corned beef hash last night.
Slice up x2 tins corned beef and layer in an oven dish, in between layers pour a small amount of thickish gravy and sprinkle with salt&pepper, top with mash potato, sprinkle with cheese then cook in the oven. I've never gone out my way to have it on ash wedensday. In fact I never knew it was a tradition

Apparently it is a play on words, 'Ash on Ash Wednesday, never heard about it until today though
I only ever had one Corn Beef Hash, when I was a kid and it was a grey sloppy mess and just put me off. Plus there was loads of onion and I don't eat onion.

Before watching US food shows I would have undersood cornedbeef hash and tinned corned beef and leftover roast potatoes with maybe some gravy or ketchup.
It's a thing of it's own in the US. They are crazy about it! |

How do you make yours?
My mum used to make it and it was literally corned beef and mashed potato - smushed together and then grilled until crispy on top. I had it at work the other week and it was vile. the cut the corned beef into chunks and fried it with onions, put it in a baking tray with gravy and topped it with sliced potato It was not what i was expecting - I miss my mum (and her corned beef hash) |

It was never with mash but usally left over roast/boiled potatoes sauteed with onions and the corned beef.
In places around the US they call potatoes done like that "home fries". |

Corned beef is a different thing in the US, it is like a boiled and spiced joint, not minced and tinned like we have it.

I've never heard of the tradition either. I make it now and again for my 16 yr old son who adores it. He eats his with baked beans and brown sauce - a real cowboy's tea!
