Having a tex-mex night.
Ribs, corn on the cob, slaw and possibly onion rings & wedges depending how i'm feeling.

Got the ribs marinating at the moment in a dry rub I knocked up last night.

I made them earlier (or, rather, I didn't because the pastry was freezer burnt (I don't make my own ) so I just have filling. Oh, well! The filling is nice, though and the potatoes are, too! Mushroom gravy sounds nice, over mash. Yum! I'm sure I could do that with soya mince.

I'm using a method I saw on Man V Food. Put the ribs in a dish with a little water and cover with foil and bake for 2 hours on a low heat.

Fingers crossed

I can always stick them in the deep fryer for a final blast if needed

I made pork steaks marinated in a BBQ sauce I made up, caesar salad and garlic&rosemary potatoes. It was gorge!

I made falafel with a cous cous thing and salad. I thought it was nice o/h ate on way home.

Tonight will be ermmmm maybe left over falafel or something spectacular which I am yet to think up

It's my 'baby' brother's 21st today so we are off out for drinks. Pub serves wonderful Thai food so I look forward to that later!! Plus a few glasses of wine of course

(makes me feel old though as I am 10 years older than my little brother )

Is that the one in Kensington Church Street? Those were the days (when I was a Londoner!).

I saved the filling from the empanadas from last night (we had Linda M mozzarella burgers instead) and I'm going to turn it into succotash and have it with roast potatoes.

How did the ribs turn out? I hope you enjoyed them. You did it similar to the way I do my pork belly slices. I give them a rub with my own homemade mix and let sit in the fridge for a bit. I then bake with foil like yours, only I baked them dry (because of all the fat) on 140C for 3 1/2 hours. I then slap them on the BBQ to coat them in a bit of BBQ sauce. They are fall off the bone delicious so I have to make sure they don’t fall down the grates in the grill.

Very creative. Sounds delish. I wish I could get my Mr to eat more veg. It seems to be peas, peas and more peas!

I had a change of plan last night and make chicken in white wine sauce instead.

Having the ribs tonight instead

I was toying with the idea of buying belly slices but went for the ribs instead. I saw a show where they made Chicharrón Colombiano and it looked really nice.
