Do you mean you have two programmes timer recording, and you're also watching one of those live (i.e. just tuned to that channel)? If that's what you mean, then yes, I've seen it work - you can pause, rewind etc - all the way back to the start of the recording you're making (i.e. not just back to the point where you switched to that channel).
You can also play them back from the recording library while they're still recording, as Graham suggested.

What the Humax can do, which the Echostar can't, is to let you watch a third live programme while you're recording two already. All three programmes (the two you're recording and the one you're watching) must be on the same two transponders, so it's quite a limited choice - but the Echostar doesn't give you this choice - you can only watch either of the two channels you're recording, or an existing recording.
That's why channel up/down works on the Humax while recording two (though it'll usually skip loads of channels when you're flicking through because there's no tuner available to watch them), but it doesn't on the Echostar (unless the two channels you're recording are next to each other I suppose - don't know - never thought to try that!).
What the Echostar can do, which the Humax can't, is record from the live pause buffer. So if you've watched something live, and just as it's ending someone else walks in and says "oh, I wanted to see that", you can hit record, and the full programme (if you watched it from the beginning) is immediately stored in the library.
If a programme has finished and another one has started, but you haven't changed channels, you can rewind back to that programme in the live pause buffer, hit record, and it'll be recorded.
(Yes, I had great fun playing with this because I can't do any of this on my Humax. As you say, they're quite different, and each one can do things the other can't - though I wonder how many of the technical details mean anything to "normal" people
