Gravy
How do you make a nice bit of gravy when you have little or no meat juices?
I've gone right off granules

It needs to be made with a stock, at a push you can use a stock cube but i like to make my own stock by using all the veg peelings and offcuts off meat, this is easier if doing for a sunday lunch of course.
Finely chop a small onion and fry slowly for 10-15 mins or so, add a drop of soy sauce and worcester sauce if you like it, add some wine and the stock to make up as much gravy as you want. If you have it, add a drop of gravy browning. In a cup mix up a couple of teaspoons of corn flower with a little water. Bring the stock mix to the boil and add the corn flower a bit at a time until it is the right thickness to your liking. Simmer for a few mins to 'cook' the flower and serve. Not simple no, but good gravy makes a meal. |

Instant gravy from scratch, without meat juices to hand, Delia Smith recipe :
Melt 25g dripping/lard/butter in a saucepan, and fry ½ finely chopped onion in it. Let the onion turn nice and golden brown. Stir in 25g plain flour, and whisk in 425ml of stock. Simmer for 5 minutes and add a drop of gravy browning if it needs a bit of colour. |
