fresh herbs

I grow the common herbs in my garden; thyme, marjoram, sage, rosemary, chives. and have a decent sized bay. I also have basil, parsley and coriander in the kitchen.

A reasonable collection I think, but sometimes a recipe calls for something a little different. Recently making lettuce shop the recipe asked for lovage - I didn't have any, so left it. The soup was tasty, nice and fresh but I wondered what difference the extra ingredient would have made.

This recipe for Escalopes of Salmon Troisgros calls for sorrel, something else I'm unlikely to find unless I start growing it.

Does anyone have any suitable substitutions that are more easily available?

Young dock leaves can be found everywhere.

Or you can buy small sorrel plants from eBay if you can wait a few days.

Sorrel is very sharp taste, poisonous if you eat too much. Something like a sharp tasting kiwi fruit I think is closest to the flavour.

Lovage seeds can be substituted by fennel seeds they are quite similar. Lovage leaves are not dissimilar to a strong flat leaf parsley in flavour.

Thanks for that link - very useful though to be honest if I haven't got lovage I'm not likely to have angelica.

I have numerous pots of dried herbs - some I've bought for a specific dish and only used once.
