Banana & Pecan Cake with Toffee Icing

Ingredients
125g butter
half cup brown sugar
2 eggs
2 banana's, mashed
half cup pecans, toasted and chopped
1.5 cups wholemeal SR flour
1 teaspoon bicarbonate soda
half cup low fat milk
Grease a 14cm X 21cm loaf tin.
Cream butter and sugar in bowl with electric mixer until light & fluffy.
Beat in eggs one at a time.
Fold in bananas and remaining ingredients.
Stir until smooth.
Pour mixture into prepared tin.
Bake in a 180�C oven for approximately 1 hour or until a skewer inserted into the cake comes out clean.
Stand in tin for 10mins before turning out onto a wire rack to cool.

Toffee Icing

2 tablespoons butter
2 tablespoons brown sugar
2 tablespoons milk
1 cup icing sugar, sifted

Gently heat butter and sugar in saucepan until sugar is dissolved.
Add milk, bring to boil, remove from heat.
Gradually pour butter mixture into sifted icing sugar, sirring continuously.
Pour over cooled cake immediately.

I was especially pleased with the toffee icing, the cake itself could have done with 10 more mins (but I was already 10mins over what they'd recommended and was getting antsy!)

Home made banana cake is very forgiving and easy to make. Its always tasty no matter your cooking skills. Great ingredients - great cake. I would not buy a shop one. What would I do with bananas that are too ripe otherwise?

Ty It really was tasty - love it when I spot a bag of reduced banana's - 16p for those ones! Well wonky on the piping though!!

I love banana cake! The local shop does a good one with tonnes of creamy icing. Never made my own, though...

Lol, as another poster said, you don't need any previous baking experience to make your own - it's what overripe, ready-to-be-thrown-out bananas are waiting for. To raise the taste from 'good' to 'amazing', keep ingredients simple but be sure to include cinnamon (or nutmeg if you prefer) and add a pinch of salt. Heaven!

I love homemade, can't be beaten. My mam does hers with walnuts and my granny's version has crushed cadburys flake in it. Both are gorge!

I've dug this thread up as I have a load of over ripe bananas and don't want to waste them, so thought I would make a banana loaf - however, I don't have any dark brown soft sugar in the house, but I do have light brown soft sugar - will it be OK with the light sugar?

my partner bought me some Banana cake from Tesco last night and it was really nice it had two layers of banana buttercream in it.

I love any sort of banana cake/loaf.

I use overripe bananas to make banana and sultana bran muffins every couple of weeks. I freeze them and then take one to work with me most days. They're very healthy but really delicious. I think the recipe is actually from an Annabel Karmel book full of recipes for children, but still...

I did one today using this recipe (chosen because it only needed 2 eggs, not 3 and I only had 2) and it torned out very nice. I think it's the first baking I've done for about 35 years (exluding bread)

Yes, of course it will.
I did one today using this recipe (chosen because it only needed 2 eggs, not 3 and I only had 2) and it torned out very nice. I think it's the first baking I've done for about 35 years (exluding bread)

The recipe I use only requires 2 eggs - I suppose it depends on how much you're making. The thing with banana cake/bread is you'd have to try VERY hard to mess it up.

I might scan my recipe and post it here...

May I be cheeky and add my own banana-related question to this thread? Today I bought a bunch of them, hoping to get something healthy eaten although I hadn't tried them since I was little. Unfortunately the texture puts me right off! I don't want to waste a whole bunch obviously - so what I wanted to ask was, if I made a banana cake/banana cupcakes would the texture be more cakelike or would there still be mushy bits that I wouldn't like? The taste is fine, I just don't like the feel of them!

Dpends on how much you mash them - put them through the blender and it will be completely cake like!

All this talk of banana cake has made me want some, bought some nana's today!

Fresh from my success with banana cake I decided to try tea loaf today

but it went wrong, showing my lack of practice over 35 years.
1. I tried a shortcut by using greaseproof paper instead of greasing the tins - it stuck so I had to use a bread knife to cut it off
2. My oven seems to be a bit colder than the dial, so they ended up taking about 3 hours and now have a chewy top and a soggy texture
3. It tastes good though
4. Next time I'll soak the fruit in alcohol as well
