Delicious! And so easy and healthy, i'll be using that one regularly. Yes, i've got to drop a few pounds so dishes like yours that are both tasty and healthy are a Godsend!

Oh bless - am pretty chuffed that you liked my recipe (although it's so simple I can't take real credit for it!)

Healthy doesn't have to be boring either

I am addicted to new potatoes at the moment as they are so low cal but you can do so much with them.
My current fave is to boil them then shallow fry them in a little olive oil with diced red onion, red pepper and balsamic vinegar. I have this as a healthy alternative to chips / mashed potato!

I've always been meaning to record what I eat, so this thread is an excellent idea. Quick introduction about my food habits -- my diet's recently been influenced by a lot of paleo literature, which means I eat a lot of meat, no grains, plenty of veg and, well, just no junk.

And today is the day I break all of these rules. (I'm nowhere near hardcore paleo, but I keep it in mind before wolfing down a needless bar of chocolate.)

Lunch
-2 Greggs' chicken and mango sandwiches (grains, lolol -- I haven't ate grains in a few weeks, but today was an especially busy day and Greggs came a-wailing)

Dinner
-2 hard-boiled eggs on a bed of garlic-infused spinach, with mushrooms, side salad and sweet potato chips (random dinner is random)

Snacky things
-1 packet of Dairy Milk buttons (it's... nearly the weekend? )
-1 orange (see! It balances everything out~)

Breakfast; Cereal Bar
Lunch; chocolate bar and a tropical drink (Yeah not the best of lunches, but i'm at college atm 4 days a week and i just dont really fancy a big lunch, although i end up hungry by the end of my afternoon lesson)
Dinner; Beef Burger and Chips (again not healthy, i was healthy yesterday so i suppose can be forgiven a tad)
Supper; A pop tart (Heaven on earth those things are)

I had a can of pepsi and a few cuppas during the day too and i always end my day with a drink of water.
I'm having fish fingers tommorrow so thats awesome.
