Rice Dishes
I have limited cooking facilities (only an old camping hob top with temperamental heating control, half a working grill, and a microwave that has a convection oven feature that is a little dodgy most of the time), but am looking for ideas and/or receipes for low fat/ low calorie dishes to go with wholegrain rice, that isn't a rice salad as I don't like cold rice.
I can't eat due to allergies, alcohol, chillies, spices, beans, atrificial sweeteners, or lots of oils and grease. And also the meal has to be as cheap and healthy as possible, and as I have no fridge, or freezer, I can't keep anything chilled so anything I make has to feed one person, or a family of 4. I tried making an alcohol free risotto once - it was horrid, and it was spoiled maybe, by the unpredictable hob. It was also probably the way I made, as I have even killed a stirfry before. lol. I just want to add some more dishes to my diet as my diet has pretty much dissolved into the same thing over and over and over....baked sweet potato and cottage cheese, salad, fruit, veg, porridge, pasta, chicken, bit of red meat and a bit of fish. It's just boring as hell and I'm fed up of it all. I have Memory Issues due to trauma, and pretty much forgot Rice existed until the other day, when a friend bought me a weightwatcher Sweet and Sour Chicken with Rice meal. So I'd like to give some wholegrain rice a go with something....just don't know what to put it with that is healthy and that isn't a curry. Any suggestions? |

Our house is semi-condemned, and we can't do any rennovation due to lack of finances. So sadly new equipment is not possible at the moment. The one ring temperamental hob is going to have to do.
Never thought of your suggestions of using rice instead of potatoes. I like it! Thanks

During my teenage years it's what my mum cooked most times as my father had a bit of a problem with potatoes.
With what is going on in your life you can't be dealing with a cooker that doesn't work properly and might even be dangerous. You do need a half decent cooker and it doesn't have to be new, same goes for a small fridge.Are there no recycle shops in your neighbourhood ? If not, have a look at the freecycle website.

Experiment with your microwave. I cook rice in a microwaveable bowl all the time. On mine it is 1/3 cup rice plus 1cup water and then cooked for 10-12 mins on 70% (depending on type of rice).
You will have to do trial and error with your mic, bowl and rice type but once you get it down it should be easy to replicate. From them on you can add stuff. It would be easier if you could fry/saute veg to put it but it's not essential. You could easily add veg, even from frozen (just general advice) - peppers, peas, sweetcorn, onion etc, into the bowl half way through the micowave cooking. |
