Sweet potato

What do you all do with these?
i've just bought some for the first time & would like some yummy recipes from you all

I've bought them once and ended up shoving them in a veggie curry recipe I found on the BBC Good Food website. It turned out okay but I wasn't overly impressed so have never bothered to buy them again!

Some people make jacket potatoes out of them if that's any help?!

I tend to cut them into wedges, season with salt & pepper, scatter over some freshly chopped chives, drizzle over some olive oil and bung them in the oven to roast for 20 mins or so.

Try rubbing 1/4 inch thick slices with olive oil (not virgin or extra virgin - as these smoke too much), season them with Maldon sea salt and cracked black pepper, then nuke them in a HOT griddle for approx 3-4 mins on each side.

TBH they're not my cup of tea i.e. too sweet with a main course, and I've only cooked them a couple of times, so other peoples' recipes may be a lot better in all honesty. But, it's worth experimenting all the same.

eat them like normal jacket potatoes (but don't eat the skin) or mash them up. Delicious, and very good for you.

I love baked sweet potatoes. I made them into baked chips.
Here's a really good recipe:

Ingredients

1 1/2 teaspoons paprika
1 teaspoon brown sugar
1/4 teaspoon black pepper
1/4 teaspoon onion powder
1/4 teaspoon dried thyme
1/4 teaspoon dried rosemary
1/4 teaspoon garlic powder
1/8 teaspoon cayenne pepper
2 large sweet potatoes
1 1/2 teaspoons olive oil
Directions

Preheat oven to 375 degrees F (190 degrees C).

In a small bowl, stir together paprika, brown sugar, black pepper, onion powder, thyme, rosemary, garlic powder, and cayenne pepper.

Slice the sweet potatoes in half lengthwise. Brush each half with olive oil.

Rub the seasoning mix over the cut surface of each half.

Place sweet potatoes on a baking sheet, or in a shallow pan.

Bake in preheated oven until tender, or about 1 hour.

I don't do much exciting with them, I peel them, chop them into small chunks, spray them with low fat cooking spray and roast them for 30-40 minutes. They go deliciously soft. Sometimes I also coat them in crushed garlic and rosemary, yummy.

We had some tonight, cubed and roasted to go with chicken, which worked really well. Previously I've made them into rosti's with red chilli's and had them with fish and a sharp lime sauce (it needed the bitterness of the lime to balance the dish, it would have been too sweet otherwise).

Three recipes I have used them in are



1) Chips - They take less time to cookk than normal spuds and brown quicker, so deep fry once on a medium heat.



2) As part of a root veg medley in any lamb/beef stew.

3) Crushed/Mashed. I added some carrots into it also.

They can be treated exactly the same way as any other root vegetable such as carrots. Roasted, boiled, mashed, added to stews, added to soups. Good in Chicken Dansak.

I make a luvverly soup with sweet potato and sweet red peppers.

Simplier is better for me.

I like them cut into chunky chips or wedges.

Drizzel with olive oil ans salt. Put on baking tray and cook in oven for 30-40 mins or until ready.

I serve them with a dip of sour cream and sweet chilli sauce. Delish.

Sweet potato and goats cheese risotto is amazing too.

They are also nice sprinkled with Paprika.

Peel and chop them into little cubes
Marinate them in Olive Oil and some Garlic Salt for about 15 minutes
Then wack them in the oven for about 30 minutes.

As another poster mentioned they come out nice and soft and taste awesome!

If you own a food blender you can always blend them with some chili, vegetable stock and cream to make a nice sweet potato soup.

But normally I just toss them in a bit of oil, cumin and salt and pepper and roast them like potatoes. But quicker, obviously.

You can mash them or do whatever you want with them I think D':

They taste horrid though, they're way too sweet.
