Sadly, people only remember and bring up the runners-up who have done better than the winners but they are actually a small number in comparison to the amount of these talent shows that there have been in recent years.
As for Susan Boyle, you can't compare anyone to her because the reasons for her huge success are little to do with her voice. The bulk of her fanbase is those (mostly middle-aged women) who have bought into her story.
Besides, why do so many people seem so surprised at the result? Jai had winner written all over it from the moment he sang his first note at his audition.
