Boyfriends birthday, and he chose vietnamese food. I made Beef Pho and served it with pork & veg steamed buns and egg rolls.

I used oxtail & thinly sliced sirloin as the meat, and also added vermicelli, bean sprouts, onion, ginger, a spice bag (cloves, cinnamon, coriander seeds, cumin seeds etc, fish sauce, lime juice, thinly sliced carrot & daikon, pickled veg, red chilli, spring onion. Cooked it for 4 hours and it was amazing.

Peanut butter birthday cake. I want to send a huge thanks to Lainomonkio for her recipe, it turned out fantastic. It doesn't quite look as good as yours, but the family will never know that

Hazza your cake looks wonderful!

Heres some terrible fotos of fabulous food that I made yesterday for an indoor street party for 7 people. Indoors - cos I live in Scotland and you can never depend on the sun!

Looks lovely K! Hope you had a good Jubilee party! We were going to watch the queen come down the river, but it's raining, and can't be dealing with the crowds lol

Looks great. Sounds like you put a lot of effort into it. Mine used a beef stock cube and took about 15 minutes

lol usually I'd be the same Degs. Seeing as it was a special occasion though, I made a bit more effort. Even made a special trip to Hoo Hings to pick up the ingredients.

Thanks Andy, but I really can't take any credit for the recipe. A very kind poster Loinomonkio made the same cake a few months ago and gave me the recipe.

Sponge
200g golden caster sugar
200g softened butter
3tbsp peanut butter
4 eggs
150ml pot natural yoghurt
200g self raising flour
1tsp baking powder

Using an electric whisk, mix the sugar, butter, peanut butter, eggs & yoghurt together until smooth. Fold in the flour & baking powder until combined. Line 2 cake tins with greaseproof paper and split the mixture equally. Bake in the oven (180c fan) for 30 mins. Allow to cool.

Filling
3tbsp peanut butter (or more if you like)
3tbsp Dulce Latte (caramel sauce)

Spread one half of the sponge with peanut butter and then top with a layer of caramel sauce. (I boiled some condensed milk and let it cool, but Carnation sell a ready made caramel). Lay the second sponge on top of the filling.

Topping
100g milk chocolate
100g dark chocolate
100ml double cream
Large handful salted roasted peanuts
1tbsp icing sugar
Crispy m&m's

Melt both milk & dark chocolate with the cream until smooth and silky. Allow to cool and then spread all over the top of the cake. Transfer to a buttered plate and allow to cool.

Isn't peanut butter straight out of the jar a bit thick to spread onto a sponge cake ?

Hi Andy, I used smooth peanut butter and it spread on fine. I did spread a very small amount of caramel sauce on the sponge first, then peanut butter and then some more caramel sauce. Perhaps this helped as the caramel was still a little warm.

Also, Andy, I've got a recipe for a peanut butter cake (not as lovely as Hazza's looks!) which says to mix the peanut butter with a tablespoon of vegetable oil to make it more spreadable. You could try that.
