Quinoa

I've never tried quinoa, but heard so many good things about it being a superfood and all that...

Does anyone here use it regularly?

I wouldn't say regularly, but occasionally (It's quite expensive!). I use it in place of cous cous.

I like it and prefer it to cous cous. I put it in a veggie casserole, and it adds a nice crunch to the veg. It sort of coats the veg.

I have quinoa almost everyday now as I'm hoping to eventually eliminate gluten completely from my diet. I use it in any recipe in which one would usually use rice like pilaf, paella, cold salads, etc.
Breakfast options: cooked quinoa 'oatmeal', quinoa puffs, quinoa flakes.
I also buy quinoa pasta, quinoa cookies and quinoa flour for baking.

Well, I tried some in a salad. It's really delicious, and very filling

How long does it last in the fridge? I'm thinking of making a big batch and just using it as and when.

I'm sure you can store cooked quinoa the same way you would other cooked pulses.
I expect whoever,hey thought you were going to store the dried grain in the fridge - which would be completely unecessary.

I eat it every night with steamed vegetables. You have to rinse it thoroughly before you cook it or it can be quite bitter. I can't say I particularly like the taste but I mix it with peas and it tastes alot better.

I never rince it and I haven't noticed it being bitter.

I heat some olive oil in a pan, put the required amount of quinoa in. Stirring while 'frying' and then add water. Leave to simmer till all the water has been absorbed/evaporated.
I don't use a lot of water though.

we have it every now and then. Cook it as per pulses, though it looks like cous cous its not the same.

You can get red and white varieties. The red takes longer to cook and tastes a bit more nutty. I prefer the white.

That sounds like the blandest veggie diet i've ever heard in recent years.

I could make a better veggie meal than that and i'm a meat eater.

Eating the same meal every night also doesn't give you a varied diet in the slightest.

Indeed, but I think I read somewhere that hannah also has to eat gluten free.
Still, there should be plenty of variety possible, even on a restricted diet.
