As for Sophie, I think she'd know that night that Amber had put gin in her drink lol. And that doesn't stop her dumping Sian for her a couple of months later. I can't see them not having some sort of relationship, the storyline wouldn't make sense if there wasn't real actions behind the emotions. Even Carla and Peter have almost slept together. And given the chance Carla would be with him after Frank. I don't see why Sophie would be any different. They may only last 5 minutes who knows, but from how this is being talked about 'Sophie's feeling for Amber win out. Love triangle etc' it sounds like Amber is just as willing to have a relationship sans Sian too. People a few weeks ago were ademant these spoilers weren't even true and Amber wouldn't be bisexual and there would be no love triangle. They were wrong, it's best not to pin expectations on characters, they'll mostly do the opposite . It's best to expect the worst and if it doesn't happen then that's good and if it does then you're prepared. I am prepared for a Sophie/Amber relationship in some form other than from afar.

You are forgetting Sophie’s personality. For her even kissing (the way she is supposed too) is cheating. So it is not necessary for her to have sex with Amber to feel guilty and want to make up to Sian.
The only reason that Sophie would have for not going ahead with the wedding is if she becomes confused about her true feelings.
Following on from that if she found out that Amber spiked her drinks she would not be able to trust her. For Sophie trust is a big thing and she would not end up in a relationship with Amber if she does not trust her. In fact when she finds out I would expect her to be very angry.
The only question would be when she finds out about Amber spiking her drinks.
As for Sophie and Sian getting back together. That could happen when Brooke decides to leave. She could realise that letting Sian go was the biggest mistake she ever made. She could go and find her and they could agree to try again away from Weatherfield (Although the more time that passes the less likely that this is to happen).
