cake recipe ideas please!

Hi, I'm particularly after some cake recipes in which the cake will definitely stay fresh for 3 days please. The more ideas the better as it's for a competition so needs to be suitably scrumptious and tantalising .
Preferably a fairly easy recipe as I haven't got loads of baking equipment

Also tried a bakewall pudding at the Tate modern restaurant yesterday, it was like a bakewell tart with the most gorgeously buttery pastry, but also had a layer of thick rich custard, however I can't find a decent recipe for something similar.

I trialled a new concept the other day and while it didn't look very pretty it tasted amazing and still tasted good 4 days after.

Strawberry, Almond, Jelly cake
------------------------------------
Make a plain Victoria sponge, but sub the vanilla with a teaspoon of almond essence.

Pick out the nicest Strawberries and half them, chuck some sugar on them and keep them back for the topping. Then thinly slice enough to cover the cake twice and dice the rest.

Take half a pack of Strawberry jelly and dissolve in v.scant 1/4 pint boiling water. Once cooled add 1/8 pint of milk and the diced strawberries and pop in fridge till it starts to thicken.

Cut the cake in half, cover the bottom half with layer of strawberries then circle it with tinfoil leaving a rim that comes up above the edge (it's to create a barrier to hold the jelly). Pour on the jelly, don't stress about seeping out as it get soaked into the base.

Whack the whole lot in the fridge till jelly has set and then pop on second layer of thinly sliced strawberries and top half of cake.

Make up this icing and ice the whole cake:
2 tablespoons butter
2 tablespoons caster sugar
2 tablespoons milk
1 cup icing sugar, sifted

Take the halved strawberries and pop them plus juices and sugar in a pan and heat on high heat for a few mins to make sugar juice into syrup and preserve them slightly, then cover the cake top with them and pour on syrup.

Sounds like a palaver, but it's not really and it tasted really nice. Let me know if you want the cake recipe, it's in a book so I'll have to grab it and type it up (only about 4 lines so no biggie!) HTH

ETA it didn't look pretty because my jelly didn't set properly, I have reduced the fluid amounts to what I think will work now I've tried it.

How long can you keep a sponge cake for ? I thought it had to be eaten rather quickly.

The jelly seeps into it and acts as a preservative. It actually tasted better once the sponge got a bit firmer (ala trifle!).

ETA: Oops - I forgot to say you turn it over after you put the top on and before you ice it!

I see !

I am not so great at baking cakes and I go through fases of different kinds. There was a time that I made victoria sponge with marmelade spread between the 2 layers and on the top, then covered it with melted chocolate and hey presto ! A giant Jaffa Cake.
Also Frangipane has been a favourite throughout the years or chocolate truffel cake (no baking required)

Courgette cake is very nice. Can't remember the recepie though. Think it's on good food.

Just to let you all know that after much deliberation, I made the Blueberry and Lemon curd one (BBC good food) and it went down so well that it won the competition!!!
