Wild boar steaks
Just bought some wild boar steaks and I've never cooked them before.
This evening I'm at a camp site and only have the option of frying them. Do I cook them like I would steak/ venison, with possibly some pinkness in them? Or should they be fully cooked all the way through like pork? Any advice appreciated - cheers. |

Lovely !
I would do as with a pork chop. Flash fry and turn down the heat on hob, add a little wine/stock, put a lid on it and simmer for a couple more minutes. Rest, reduce the liquid in the pan a little further and serve. ETA : Pork can also be served pink, so don't over cook your wild boar. |

Mainly red wine is used, but I would think white wine will do the job just fine.

You could do them with Chinese flavours. Rick Stein has a very nice recipe for wild boar, but it's more of a stew/casserole but if you flash fry the meat and just add it at the end for cooking though then it could still be nice.
http://www.sillfield.co.uk/wildboar/r1.html I didn't have wild boar so made it with pork. Here is another Stein recipe. Mediterrannean with mushrooms and chorizo. http://www.bbc.co.uk/food/recipes/wi...withwild_86762 |
