Bulk/Freezable Recipes

Hi

I usually make food just for myself, but rather than measure one sixth or one quarter of every ingredient of a recipe, I thought I would ask for recipes where I can freeze or store for a week-ish. Also doing it bulkly does seem to save money too which is good in the present climate

Now I don't have many dietary requirements apart from not being able to eat onion, so if your recipe contains onion could you please let me know if it will be all right without the onion or if you feel it really requires it

Any recipes will be appreciated and I am thankful for everyones input even if I don't reply to everyone please be assured that I am thankful

I do like Italian cuisine and eat a lot of pasta if that helps with your recipe selection, but feel free to add anything you like and I will consider it.

Google 'once a month cooking'

There are plenty of websites with good advice on bulk cooking.

Bolognaise/Ragu base. Cook up a big pot of it and freeze it in portions. I wouldn't put mushrooms in it or freeze it with pasta as you can then use it for different things.

You could use it for spag bol/lasagne by adding pasta.
Add some cumin and other spices and serve with rice for a chilli.
Serve with mash and veg for a more British type dish.

degsy's suggestion is a great one - I do this kind of thing regularly, only I prepare a much more basic base.

Try a simple mix of mince, onions, red wine and oxo cube.

It's a great base as it is for cottage pie, mince pie or for stuffing peppers.

Once you've defrosted a portion, you can then add in extras like tomatoes, mushrooms, bacon, lentils or whatever else to make bolognaise, lasange or chilli con carne.

I bulk freeze the following which are all pretty easy to do in large quantities,

Bolognaise sauce. As mentioned you can add stuff to it when reheating or turn it into a chilli.
Chicken curry
Sausage casserole
Pies. You can get foil containers from pound shop, something like 10 for a quid.
Soups.

Soft veggies and potatoes do not generally freeze well (go all mushy) and don't add dairy to pre-freezing. You can get decent freezer bags from Aldi, something like 50 for a £1.50 though don't put them in the microwave. You can quickly defrost in warm water in about 30 minutes though overnight in the fridge is best. And don't forget to label everything.

I regularly make and freeze: lasagna, shepherd's pie, casseroles and curry.
